Week 34...

Cravings This Week-   French Fries, but I need them to be steak cut French Fries.  I haven't craved a french fry in years?  So, now of all times...  But, next week I'll be onto something new...

Sleeping Patterns-  My body pillow is AMAZE-BALLS!!! And, my new best friend.

Biggest Change-   I am officially swollen.  This is new to  me as I've been lucky that I haven't been swollen at all.  I could barely put my wedding ring on this morning.  It must be due to the fact I stand on my feet all day for work because I drink about a thousand gallons of water a day.  Does this go away anytime soon?  I don't really like feeling this way.

My girlfriends are throwing me a shower this weekend and I am so excited!!!  I am also revealing her name at the shower:)  Talk to you next week!!!

Spicy Tofu with Broccoli...

Tuesday, January 8, 2013

I am always looking for new recipes to make that are healthy and delicious.  I found this recipe on someone's blog several months ago.  I've made it numerous times now and it's become one of our absolute favorites.   I apologize to the blogger this came from as I can't remember who I got it from. I know that's bad blogging etiquette.  If you are the rightful owner of this recipe please let me know!

Anyways, it's extremely simple to make, only takes a few ingredients, and best of all tastes incredible!

Start with a head of broccoli and cut off the crowns.  Heat olive oil in a pan for a minute.  Saute' the crowns in olive oil for 5-7 minutes.  Remove the broccoli from the pan and set aside.
In the same pan heat more olive oil for a minute.  Add cut up Tofu chunks.- I use the extra firm tofu, but feel free to use whichever kind you like.  Saute' the tofu for 5 minutes or until light brown on all sides.
Put the broccoli crowns back into the pan with the tofu and stir together for 2-3 minutes.

Next, take a can of Trader Joe's Masala Simmer Sauce and pour on top of the broccoli and tofu.  The sauce adds a nice spice to the dish.
Heat everything together for 2-3 minutes and dinner is served!
We also heat up Naan bread in the oven for 1 minute and eat with the dish.  The Naan bread tastes great soaking up the sauce!

Week 33...

Thursday, January 3, 2013

I haven't posted in several weeks as I spent the holidays enjoying much needed time with family and friends.  We had a wonderful holiday and hard to believe we are already in 2013!

Here's this weeks update.

This week you are the size of a pineapple!!!

Cravings This Week-   Orange Juice and Pistachio Pudding.  I know this sounds like an odd combination, I don't eat/drink them at the same time.

Sleeping Patterns-  Ironically enough I have been sleeping extremely well these past few weeks.  I think I am just so exhausted from the holidays it's catching up with me.  I've also indulged in a few glasses of red wine before bed here and there.  I've found that it really helps put me in a deep sleep.

Biggest Change-   I can no longer breathe very well and my sinuses are completely stopped up.  I was told by 4 different people last week they had this same issue and it doesn't go away until the baby comes.  So, I only have 7 more weeks until I can breathe normally again.  I have become very good friends with my "Neti Pot."
Also, baby girl likes to poke me now and constantly.  She pokes my right side night and day.  It doesn't matter what I am doing, she is poking me.  I am not sure why she thinks this is a fun thing to do to her poor mother who can no longer breathe.

Over the holidays my mother threw me a beautiful shower in Texas with all my family. We had the best time catching up, eating, and looking at all the darling baby clothes I opened.  Little miss will surely be the best dressed babe on the block!

It's a baby in a fruit basket bassinet!
